Priscila Santiago Mora
My experience as a Fulbright Scholar was related to vascular biology research at the University of the Pacific´s Pharmacology Department. The research throughout my doctoral path has been mainly with the antioxidant activity of "garambullo"- a berrycactus originary from Central Mexico and its preservation after using novel drying techniques. Other research areas have been related to shelf life extension, betalains (pigments) and amaranth.​

MY LATEST RESEARCH
I have developed a passion for what I do every day as a researcher. I have gained knowledge about the berrycacti from its botanical perspective; how this crop relates to Mexican history; the consumer, seller or grower point of view; the food industry´s interest in it as a pigment and ultimately trying to develop a process to preserve this underutilized fruit as a source of antioxidants with benefits to our health.
I recently published the conclusion on the optimal conditions for dehydration of berrycacti without losing its antioxidant properties and I am currently working on the publication of the ex-vivo results on using a dried berrycactus extract on rat aorta to observe its vascular benefits. Happily, my research also includes a book chapter (in print) detailing a lot of information from berrycacti.
